Nose: Stone fruit is the first on the nose, pineapple follows mingled with dried apricots and finally lemon sherbets
Palate: Candied pineapple accompanies an unctuous, buttery mouthfeel. Honey and brioche flavours then take the floor.
Finish: Long, sweet and bowl of peaches and cream.
About Uncharted's Heart of Gold
Born of the highlands, this is a marriage of malt whisky spirits blended together years ago - possibly before any maturation had been undertaken at all. They were aged in ex-bourbon wood before Uncharted Whisky tasted and loved the spirit almost 2 years ago. At that point, Jack and Dana transferred the spirit into a fresh Sauternes barrique to create something new - you could say ‘Uncharted’.
Sauternes could be described as the royalty of dessert wines. It can only be produced in one place in the world – Graves in Bordeaux – the flavours are as rich as they are complex. The most premium of Sauternes producers, Chateau d’Yquem, claim that it takes the fruit of an entire vine to produce a single glass of the wine. These exceptionally low yields mean that there are very few bona fide Sauternes casks available to the whisky industry (perhaps the not-so-bona fide casks are an interesting story for another time).
Now 10 years old, the spirit has developed and the exceptional golden wine cask has added to the experience. For the eagle eyed among the Uncharted Whisky followers, this is the same spirit as was featured in the Mixtape releases. However, with the different maturation, this is now a very different whisky.
