The process of creating Convite Jabali is a labor of love and tradition. The mature agave plants are carefully selected and harvested, then roasted to perfection in an underground pit oven, infusing the mezcal with smoky and earthy undertones. The maguey is then meticulously milled using a horse-drawn tahona, ensuring the extraction of the most delicate flavors. Following this, natural fermentation takes place using pristine spring water, adding a refreshing and pure quality to the mezcal. Finally, it undergoes a double distillation in a traditional copper alembic still, which imparts a silky smoothness while preserving the essence of the agave.
